Over Medium Eggs
Learn how to cook the most delicious and perfect over medium eggs. Makes the yummiest breakfast with a slightly runny yolk.

Ingredients

tablespoon
butter

egg
Salt and pepper to taste
Fresh herbs

Instructions
Heat a skillet to low heat.
Add about 1/2 tablespoon of butter and allow to melt.
Crack the egg into a preheated cast iron skillet.
Cook until the white is almost cooked through. About 2-3 minutes
Flip the egg and cook for about another minute or 2. The yolk should almost be cooked through, but still be a little runny and gel like.
Top with salt and pepper.
Add herbs like parsley or thyme (optional).
Notes
Only cook 1-2 eggs at a time to avoid over crowding the pan.
Heat over low heat. Cooking too high will overcook or potentially burn the eggs without cooking the yolk enough.
Choose a non-stick pan for cooking so the eggs don’t stick. I like using a cast iron skillet or a ceramic coated pan for a healthy non-stick option.
